John-David's Fantasy Brownies

JD lovingly calls this lusty goodness John-David's Fantasy Brownies, because apparently he doesn't actually get to have these. I don't know about that, heck, I made them tonight didn't I? Regardless, these are amazing. Not sure how they can be bad with 1 1/2 lbs (pounds not cups) of chocolate. I have to adjust these for altitude (the adjustments are included in the recipe), otherwise the center sinks to about 1/2" thick. Although still tasty, not quite as beautiful. Ingredients
1 1/2 pounds semisweet or bittersweet chocolate, chopped (I use semisweet chocolate chips)
1 Cup butter
6 Large eggs
2 Cups granulated sugar
1 T pure vanilla extract
1 1/2 Cups all-purpose flour
1 tsp baking powder
1/4 tsp salt

For High Altitude Bakers: Add 1/4 C milk and decrease baking powder to 3/4 tsp.

Preheat oven to 350 an dplace rack in the center of the oven. Butter a 9x13 inch pan and line the bottom of the pan with parchment paper. Butter (and flour or cocoa if you want) over the parchment paper.

Melt the chocolate and butter in a double boiler OR in a stainless steel bowl over a saucepan of simmering water.

In a large bowl whisk, or use a mixer, together the eggs and sugar until pale yellow. Fold in the melted chocolate mixture and vanilla extract. (For High Altitude Bakers add the milk now)

In a separate bowl, whisk together the flour, baking pwoder and salt and then fold into the chocolate/egg mixture until just combined.

Pour into the prepared pan an dbake for about 40-55 minutes (start checking at 40 minutes) or until a toothpick comes out with a few moist crumbs. Remove from oven and let cool on a rack. Enjoy with Ice Cream or a glass of milk.
