
So I've been trying to expand my baking repertoire. I've tried ciabatta bread, french bread, delayed fermentation whole wheat bread, focaccia bread, croissants, and many types of cookies and cakes. I've been hesitant to try danishes because well, they are so good and I don't want to screw them up. However, the author of the Pie and Pastry Bible says that until you've made these at home you will not know what a good danish tastes like and man was she right.
However, as the rest of the world started 2010 eating egg white omelets for breakfast and salads and poached fish for dinner we started out 2010 eating at least 3000 calories of danishes. They were so good though! I've never had anything like them before. We made Pear, Pear Cream Cheese, Strawberry & Strawberry/Cream Cheese, Raspberry & Raspberry Cream Cheese, Peach & Peach/Cream Cheese, and straight Cream Cheese. These will definately be made at least once a year ;)
